Preheat oven to 350 F
Ingredients:
- 1/2 c. rice
- 1/2 c. coconut milk
- 2 drumsticks
- 1/3 c. plain yogurt
- 1 mango, diced with some slices for garnish
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. cayenne
- pinch of salt
1. Mix rice, pinch of salt, and coconut milk together. Cook over low heat until there’s no more moisture at the bottom.
2. Stuff some of the mango under the chicken skin
3. Mix the rest of the diced mango with the yogurt, cumin, garlic, cayenne, and salt.
4. Top chicken with yogurt, bake for 40-45 min.
5. Serve chicken over coconut rice with slices of mango.
