Ingredients:
- 12 mushrooms
- 1/2 c. finely chopped baby kale
- Brie
- 1 clove garlic, finely chopped
- 1 tbsp butter + a little
- Salt/pepper to taste
Directions:
- Preheat oven to 350 F
- Remove stems from mushrooms and finely chop
- Melt butter in skillet, brown garlic
- Throw in mushrooms and kale, saute for 2-3 minutes
- Stir in salt and pepper
- Stuff each mushroom cap with a small block of Brie
- Top with mushroom/kale mixture
- Bake for about 25 minutes
