Everytime I get brussel sprouts, I always end up roasting them. I had a bag of brussel sprouts getting old in my fridge so I wanted to cook them up before they went bad. I didn’t feel like waiting around for some slow oven cooking, so I threw together a quick pasta!
This is a simple recipe, no sauce required. You can prepare the brussel sprouts in the time it takes for the pasta to cook.
I sautéed some pine nuts and garlic in butter, then tossed in the brussel sprouts (roughly chopped). Stir around for a few minutes, adding in some salt, pepper, dash of lemon until cooked. Once the pasta is cooked, mix everything together with a little olive oil, and add in salt/pepper to taste.
And there’s dinner in about 10 minutes!
